Crepes * *















This recipe is for sweet desert crepes but if you leave out the sugar you can also eat them with ham, mushrooms, cheese, bechamel, or anything you like actually.

- 2 eggs and 1 egg yolk
- 35cl milk
- 120gr flour
- 40gr melted butter
- pinch of salt
- zest of half an orange
- 25gr vanilla sugar (or plain sugar and vanilla essence)
- 1 tablespoon olive oil
(serves 4)

If you have a mixer, put all the ingredients in a bowl and mix them through. Easy.
Otherwise, make a well with the flour, put the beaten eggs in the middle and thoroughly mix both while incorporating the milk a little at a time. You can then add all the other ingredients.
Leave the batter to rest for at least an hour at room temperature.
Heat a small knob of butter in a frying pan and pour a ladle of batter. Make your crepes as thin as possible and cook them on both sides for about a minute each.
