Potato and avocado salad

This can be a dinner for two, or an entrée for four or five.
We are probably not going to make this dish very often, because "someone" in this household doesn't like grapefruit in a salad. I thought it was a good match, but why don't you be the judge?



- a few leaves of lettuce
- 4 medium sized potatoes
- 1 avocado
- 1 ruby red grapefruit
- about 150gr shrimps, olive oil, white wine, salt, pepper
- about 50gr smoked salmon

For the dressing:
- 1 teaspoon mustard
- 2 tablespoons lemon juice
- 3 tablespoons extra virgin olive oil
- salt, pepper


Tear the lettuce in small bite-sizes and arrange them on a flat dish.
Boil the potatoes in salted water and let them cool down. Peel them, cut into chunks, and lay over the lettuce layer, together with slices of avocado.
Mix all the dressing ingredients and pour over the lettuce-potato-avocado (not over the rest of the ingredients).
Peel and section the grapefruit and put the chunks over the other layers.
Sauté the shrimps with a bit of olive oil, white wine, salt and pepper. Add them to the salad.
Last, decorate with slices of smoked salmon.
